I had tried a new Piri Piri seasoning to flavour some bacon for a friend. I liked it so much that I thought I would try it on chicken.
I mixed together:
2 ml (1/2 tsp) paprika
1 ml (1/4 tsp) oregano
1 ml (1/4 tsp) cardamom
1 ml (1/4 tsp) ginger
1 ml (1/4 tsp) garlic powder
1 ml (1/4 tsp) onion powder
1 ml (1/4 tsp) salt
1 ml (1/4 tsp) cayenne
I spatchcocked a 1.4 kg (3 pound) chicken
I rubbed some of the mixture under the breast skin and thigh skin. I rubbed the rest over the surface of the bird.
I put it in the pellet grill at 350 F over competition blend pellets and cooked to an IT of 165 in the breast.
It is still winter here in the mountains.

The Verdict
This is a very tasty seasoning and I will be using it again. The chicken was moist with nice crisp skin. Altogether, a very nice meal!
