I just love pimento cheese, its probably one of my favorite foods and so easy to make. I decided to make some the other day. I went to the grocery store, picked up the cheese and pimentos, but when I got to the spot where Duke's mayonnaise sits they were all out.
NOOOOOOOOOOOOO!!!! So I had to use Hellmann's. But despite this near disaster, It still turned out great!
1 lb. Sharp Cheddar, 1 lb. Mild Cheddar, and 1 lb. Pepper Jack
Cheese after I ran it through the food processor.
Added 2 jars of pimentos, and 2 cups of "Hellmann's Mayo.
Added some black pepper, onion powder, garlic powder, cayenne pepper, ancho Chile powder, and a little Tabasco.
I let it sit over night in the fridge, so the flavors could blend. mmmmmm good.
I wonder what this would be like with smoked cheese? Has anyone tried it? Thanks for looking!
