Planning on a brisket first. Then, cornish hens for Christmas dinner.
 
I came across a custom smoker maker, Klose Pits, in Houston. He has a model that is similar to this one. Perhaps mine was an earlier model.
 
Looks way too clean to me. Get that baby fired up and show us the goods.
