A few weeks ago we picked up a two pack of plate ribs and instead of freezing one of them I put it in a UMI bag to hang out dry aging for a bit.....

Pulled it out of the fridge last week after 14 days.....I didn't want to go too long because these aren't very thick and wanted to keep the trim to a min.

All trimmed up....

Just look at this marbling!!! This is A5 level vs choice as it was marked. FYI, the fat was rendering at room temp as I was trimming!

Dropped in the sand seasoning (my 5 spice butter rub)....this stuff covers really nicely on semi dry beef.

On the RT 1600 @ 265, my go to on plate ribs......

With this being dry aged it cooked much quicker than the non-aged one..... Her it is at 4.5 hours..., its 180 INT so ready to wrap.....

I pulled it at a INT of 198 and rested it for 3 hours at 145 in the house oven. I forgot to get the sliced pictures but due to the marbling, I trimmed it to nice clean meat slices and didn't need to dress it with the rendered tallow because it didn't need it. The boy and Mrs C wanted try a bordeaux cherry balsamic reduction....HOLY smokes it was a PERFECT match!

The money shot. Honestly this tasted and had the texture of a A5 NY. The cherry really helped tame the richness in a very good way!

Wow! This is just amazing! I'd nominate this one for a ride on the spinner!
Much appreciated CS!
Yup. I'll take seconds please. Of course don't forget firsts! That looks amazing! Great job.
thanks TM and there wasn't anything left for seconds at all..... it was a one meal day though!
What a great looking meal Cortney! Y-U-M 😋
Thanks schlotz!
Woah look at that plate! Yes please yum yum
Many thanks ozy!

looks awesome man!!!

same thing i do with deer roasts to improve flavor and tenderness. since its on a bag i call it wet aging though.

i wonder what the entire ageing was? the meat packer aging plus your 14day age.

ive done 24day wet age on deer roasts that technically already aged 7days in cooler of ice before i processed them. thats over 30days all together! lol sure tasted "prime" though!!

I've never seen marbling like that on plate ribs--fantastic! And the plated shot is inspiring.
Thanks SC! We have had short ribs a few times this marbled, but these were near perfection in my book!

Thanks, in.p. I put it in the umai bag when the use date was a day out or so, so I suspect the wet age was near 21 days....That is pretty typical from what I have seen for the plate ribs. So total ageing was more like 35 days....It was so tender!!!
That looks yummy!
many thanks norm!

Now that is a pretty plate of food I could make disappear, and then clean off my face,

I know you have cherries in the reduction,

BUT what the heck.... NO dessert, come on man, lol

David

never heard of those bags. do they breath or something?
Yes it’s a membrane bag specifically made for dry aging….they really good!

Here is a post were I dry aged a brisket point…. I show step by step on how to do it on a whole NY loin on the second page….the only thing I didn’t show is flipping it over after 10 days from fat side to meat side, but that’s in the instructions you get.

Much appreciated David! Mrs C ask if we wanted a dessert and both me and the boy could barely break the gaze from the food coma so sans desert it was! Next time! lol!
