What's the cook plans after the burn out and seasoning?
 
Planning on a brisket first. Then, cornish hens for Christmas dinner.
 
I came across a custom smoker maker, Klose Pits, in Houston. He has a model that is similar to this one. Perhaps mine was an earlier model.
 
The one thing I'll say is those welded shelves are a fantastic design idea. I wish more commercial builders would supply something that sturdy.
