Pan fried Red Snapper Fillets with Shrimp and Crab Cream sauce over Pasta, Sauteed Yellow Squash and Zucchini, and Italian Baked Tomatoes

Had my buddies from Kansas down fishing this past weekend. We did very good and caught a bunch of fish. I only kept a few fillets to cook this week, sent the rest home with them. Well, tonight was dinner night.

Pan frying the snapper fillets...

Stewing down the summer veggies...

Adding the shrimp and crab to the sauce...

The finished sauce...

The Plate....served with a bottle of Pieropan Soave Classico wine.

Oh, and homemade cherry ice cream with brownie and chocolate for dessert!!!

I'm loving this! Snapper is such good fish. I have fond memories of my days in the Keys eating the abundant yellow tails and mangrove snappers. There's a place.down there that made a whiskey peppercorn sauce you could get on any fish, and snapper was always my choice.

but I forgot about the olive oil....add about a tsp. first to each tomato then add the rest of the ingredients....
