Storm passed, house cleaned, and supper made!

Spare ribs, potato salad, and fresh pineapple! I must have been really hungry for spare ribs (I always am), and these were really exceptional. You'll note on my plate I like the stuff off the spare ribs that most don't, you can have those nice pretty ribs, let me have the backbone, flap and end pieces!

Pineapple was a second thought item, it goes really well with the greasy spare ribs, try it you'll like it!

Everyone knows how to do spare ribs, I won't bore you. I will mention that you should never go by size fits all rules. These cooked in 5 hours, without foil. I went to check them at 4 hours and the bone pulled out...OMG Good ribs! Wish I'd bought more because I believe it was the meat, seemed so fresh. Salt, pepper, ancho, a little apple cider vinegar and oil rubbed in. Smoked with copious amounts of pecan.

LOL... Excellent ribs, I could pull the meat off the bone but it stayed on the bone when bitten off. Just the right bite for me.

I gotta reiterate, that fresh pineapple was totally awesome with spare ribs! You gotta try it.

Last week I rotisserie's a pineapple over lump charcoal for a little over an hour until it started to brown. Pulled from the grille cube it up and topped with vanilla ice cream and a sprinkle of cinnamon while the pineapple was still warm.

OMG I have just eaten and you made my mouth water! That would be like pineapple crack! Think about some of that pineapple with some Captain's.
 
Them ribs look great Foam. I like spare ribs but the wife dont.

My Pop was brought up on a West Texas cotton farm as a kid. Fruit and veggies were always his favorite. During WWII he was shipped thru Hawaii and it was the height of the pineapple season and he went nuts. So as kids we got pineapple and coconuts when ever he saw 'em in a grocery store. I like fresh pineapple, I have no teeth left so Coconut has fallen to the wayside. LOL

I need to try a full rack again, instead of just buying STL's.
I started out doing full racks & just got lazy I guess.
Going to the store this AM, gonna look for a rack!

I usually get cryopac's with 2 or 3. These were just abnormally fresh looking and I assume its why they cooked so fast. After 4 hours I went to flip 'em and the bone came out. I was smoking at about 240. Should have taken much longer and these were nice large ones also. They had the right bite and they didn't fall off the bone either, just the way they are supposed to be! Pineapples are always on sale at the market.

Long long ago a friend from Georgia taught me about peach halves, brown sugar & rum on the grill. These were fresh Georgia peaches, but ya know even the old store boughts are not bad when I think about it.
