Ok to interrupt drying?

My jerky is well-cured and baked off. I've been oven-drying for four and a half hours. It looks like I still have three more hours to go. It's bed time. Lights out.

I'll pat surface grease dry, take the meat to close to room temperature, zip-loc bag, and refrigerate. Finish drying tomorrow.

I figure food safety will be maintained and the product safe to eat. Do you agree?

BXM, I see no problems with safety with the cure in it, not sure if it will do anything to the texture?
