Smoker is probably around 700 or better, but it wont make it tongue light. The genset, two fridges, propane tank, fryers, griddle, 50 gallons of water are all in front of the axle

We have a few franchise BBQ joints around Tyler that stay pretty busy, but the few REAL BBQ places that do it the right way, are always busy and sell out.
