Smoker is probably around 700 or better, but it wont make it tongue light. The genset, two fridges, propane tank, fryers, griddle, 50 gallons of water are all in front of the axle

Oh yeah.... are you working this alone .... maybe girls in bikinis, like the coffee stands up here in Washington... Maybe not.... the only reason it works up here....... Rain all the time.... girls don't get much chance to wear skimpy clothing like bikinis.....
 
I guess when you have your soft opening, you are going to send all of us samples !!!  Hey Buddy I know you will do well, Real Deal BBQ not that commercial, automatic smoker junk served up by some kid that doesn't know the point from the flat. We have a few franchise BBQ joints around Tyler that stay pretty busy, but the few REAL BBQ places that do it the right way, are always busy and sell out.
