Other than the color, is there any dfifference between the mahogany (brown) casings and the (assuming) natural colored callogen casings?

There is no difference. May i ask what sausage you are making, collagen casings are good but some applications they can be tricky, for example, they don't tie well like natural casing. Just want make sure you have a good experience and not a frustrating one.
