Snack stick help

Made snack sticks for the first time. Used same recipe as i use for summer sausage chubs.

I bought 17mm callogen casings as that is the size i saw on here and other places.

They did not come out as snack stick size. They are the size of hot dogs. What size casings do you use for slim Jim type sticks?
 
Those 17’s must have been mislabeled because dogs are in the 20mm range.

15mm are great but hard to find. I typically use 16mm casings, not as small as a true Slim Jim but are small meat stick size.
 
The problem with slim jim size is finding that small of a tube/horn that you can still get your mince through... and then also finding that small of a casing...

The most popular size is 19mm... The moniker Snack Sticks is really suggesting "Meat Sticks"

If the meat spice formula for a slim jim style stick was any larger than the pencil thin it would be rather strong for most palates.
I like Keith's JckDanls 07 JckDanls 07 meat sticks. I think he found 7 pepper to be the most popular.
He also makes a great point on finding a stuffing tube that small let alone the casings.
