Hi everyone!!

I'm up here in New England (patriots country). I just received a gasser as a gift. I am waiting for my maverick thermometer to come in. Being as impatient as I am, my first smoke was a couple racks of ribs. I followed the 3-2-1 method, and I think ribs were overcooked.
I just wanted to say hi, and am looking forward to some great tips.
 
Welcome to the forum!  You'll like the Maverick, and gassers tend to run hot. 3-2-1 may have been too long depending on smoker temp.

The stock thermometer read 250,I suspect it ran hotter than that. Maybe next time 2-2-1
 
Thanks for the welcome, when I tried to cut between ribs the bark came off in big pieces. I put mustard and dry rub on the night before . Any tips would be appreciated
