Thanks! I've been wanting something like this for years. Finally said. Yeah, it's time! Can't wait to get it up to the camp. Unboxed. And put together. Comes in 8 big boxes. Set up weighs just shy of 1200 pounds.
would love to see the finished results!

i know what you mean with the asthma. ive had it my entire life bad. the air feels heavy to breath when hot n humid. doc ever have you try Spiriva? it made me feel ten years younger and hardly ever use my albuterol now! it really made my life easier.
I will have to ask the doctor and also see if my insurance will cover it. Otherwise I’m taking the advice of everyone here and just smoking at a higher temp and getting the heck out of the sun.

FYI: When you use Alcohol products, then cook.
The Alcohol evaporates!
It sure does, but it leaves a flavor, I often use whiskey and green peppercorns on beef, moonshine, or Jack Daniels in my bread pudding glaze, just for that reason/ flavor.

Also that statement has been proven to not be true. They have done testing and it really depends on the alcohol content and methodology of the cook. Here’s a nice synopsis from Idaho State University:

Very interesting article. I always wondered what the level really was. I've wanted to try making NA beer, but the process is not so easy and you basically risk wrecking a 5g keg of beer you took 2 weeks or more to make. It's notoriously difficult to remove the alcohol without causing other changes, and doubly so as a home brewer where you don't have industrial controls.

I make my own BBQ sauce and it's a whiskey sauce, but that is reduced for hours on the stove, so likely it's at the minimum or near 0% when done, but obviously not 0. Still, it sounds like you are sensitive to something more than just the alcohol. Maybe something else present that comes along for the ride during the fermentation process. There's 100s of compounds that can be produced depending on how something is fermented. Different types of yeasts and bacteria have all sorts of by products. If you're still sensitive after nearly all alcohol is removed, maybe alcohol is just the common denominator that seems most obvious, but isn't really the problem (directly). Idk.

Honestly I tried beer, wine and everything in between. Even disgusting O Douls gives me a problem (thought taste of it really doesn’t help either 😂). I miss having a nice cocktail sometimes and then I remember my hospital bills and I get over it 😂. Your whiskey sauce sounds wonderful and wish I could sneak a bite.

That’s really awesome you’re a home brewer. Got a buddy that is a brewer too and I actually take his spent grains and make some bomb bread with it or I deliver it to my friends pig farm where the pigs are happy to eat it all. And then we eat the pigs!

Hi folks!

Firstly thanks so much for the kind comments and wise words because it really made a difference. True to my moniker, I ended up being unable to sleep so I just decided to start the cook at 4 am and was able to finish before the outside temp hit 90 degrees. I did the higher temp cook, and all I gotta do for the party tomorrow is to add the sauce and warm it up. I did burn a little bit because it was still dark at 4 am but overall I’m really pleased with the results.

Thank you very much!

just wear a wet shirt and swim trunks around on those hot days. that does wonders when i work outside. and as far as "feels like" they can shove it. everyone is different in what it feels like. its just another term to help freak people out about weather. whats the next term gona be "die in so many hours outside" ? lol my wife works in air and has trouble when outside in the heat. myself im outside and acclimated to it. natures way to get you ready. that in itself helps loads. my trouble with heat is my asthma. its feels like breathing water up here in the humid north.

probably already in your head but you could also smoke them hotter than usual. when im short on time ill do that with great results. you can turn out tender ribs in a n hour. grill them over your smoking fire till nice and charred. then wrap tight with some beer inside and put it rt back over the heat.
I have live and worked construction in places that reach 120* plus. I'm telling you a wet tee shirt doesn't cut it. The good contractors will bring in Bigass fans with misters and use old WW2 parachutes to use as shade canopies. Without the above people drop like flies, and one you have had heatstroke you become more susceptible to it each time you get it. I can no longer handle heat, it tears me up big time. It makes it impossible to enjoy outside events or even simple yard work, without feeling sick. I avoid the heat these days, whenever I can, when I can't I use battery powered mister fans and keep an ice chest full of ice water to dunk straw hats and towels to wrap around your neck, head and back.
I also drink Pedialyte along with Gatorade, and a ton of ice cold PH water, and beers after work. You know it's hot when you drink over a gallon of water and have salt crystallizing on your face arms and shoulders, and only piss once. LOL!!!

Looks Kill'er to me, a little dark isn't a problem for party grub, I'm sure people will devour them.

I got lucky weather wise, it's only getting up to the low too mid 80s here today, I can deal with those temps, actually the 80s are a perfect summer time temp. Warm enough that the bikinis clad women come out to play, not hot enough to make you feel sick. LOL!!!

Today is my cooking day for Mom's 85th 4th of July Birthday pool party tomorrow. I actually slept a little last night, so I got a late start. I have two pork butts on now, had to sit down for a few minutes, because my back and legs are not happy today. I'll throw on 4 to 6 racks of St Louis ribs in an hour or two. I started the butt's out at 220* hoping to get a little more smoke into them, when the ribs go on I'll bump the temp up to 265*. I'm using my new Recteq Beast 1000, this is my first long cook on it, I'm curious to see how it performs.

Nice job on the ribs.
Dan.

Hi Dan,

Thanks for your tips and tricks. It really helped. I can’t wait until it’s regular summer weather again. I have a black dog and she ain’t happy with this either, as I have to keep her inside or she will surely get heat stroke just standing outside. It’s not even fun to be in a pool, feel like I’m a freaking dumpling in soup.

Good luck with your cook!! And also thanks for the compliment. Considering I’m the only who was even willing to do this, people will be fine with a little darkness. I attribute the darkness to user fatigue hahah. Please share pics! Also curious how your rig will do with a long cooking session!

When the Rams came to St. Louis , the company I worked for got the contract for the new stadium .
I worked on some of the fancy meeting rooms and pre function areas .
It was 140 degrees in some parts of the building . We were all drinking gallons of water and gatoraide but at some point you stop sweating , and stop going to the bathroom , because you have nothing left .
I chugged a quart of water and immediately had to take a leak . Walked outside , 98 felt cold , and I started shivering . Teeth chattering and shaking . Went back inside to warm up ! Lol .
It's no joke , and like you say , once you have it you're done .
I went out today for about 15 minutes and it kicked my backside . Like lost periods of time .
My vision always goes gray / monotone . I know it's time to get to the house .

That is no fun at all, before I got into the Plumbers Union, I worked at the Hyatt Regency Embarcadero in SF, I was in the mechanical Engineers Union. For the first 2 yrs of my apprenticeship all I did was work Graveyards in the boiler rooms on boiler watch. It was the most boring job I've ever had, and man it was stupid hot in those boiler rooms.
I remember puking my brains out the first week I started, the Journeymen would swing by to check on me, they only stayed long enough to add chemicals or look at the logs, and laugh at me, it was fricking miserable at best. And the main reason I never turned out as a Journeyman. I quit the day I was offered a job by the Plumbers Union rep. All the Journeymen I worked under were pissed, because that meant they had to take turns doing the boiler watch, it was frick'in miserable. I couldn't do it these days, it would kill me.
Ah, to be young again, if I could do it over, I would've quit the first time I got sick. Working graves at 18 yrs old sucked too, I missed so many Keg, pool parties, but my wallet always had cash in it, and I had sweet muscle cars. LOL!!!

Man, were we stupid or what? The guys in the union that had connections, and took the easy streets, got paid the same as me and didn't even show up half the time, which used to drive me insane. They got paid a full week even if they only showed up for 3 shifts.

I'm glad I was a hard worker, with a good reputation, that meant a lot to me back them, actually it still does.
