We are new to the smoking scene.  We have purchased a Louisiana Grills Champion series pellet smoker.  Did the initial burnout or seasoning last weekend and will do our first smoke this weekend.  Going to try a Briscuit. We are going to use the meat probe that came with the unit for this maiden run.  We will be using Louisiana Grills competition blend pellets.

We have read some good and some not so good reviews on the smoker.  All in all I think our choice is a good one. 

We are very interested in any advise or tips you want to share regarding the smoking process, smoker start up  additional tools needed etc.

I do have an Igrill 2 on order.

Welcome to the forum!

Hope you get the iGrill before you smoke that brisket.

The factory probes are almost always way off.

Try testing the probe in a pot of boiling water to see if it reads anywhere around 212.
