Hey all, as some of you know I recently got a new to me Weber Performer. Life as with most of us has been busy lately… so after having it for a few weeks… finally got to do my Maiden Voyage with it. The bottom grate was able to save… the top one was trashed. So ordered a new cast iron one.

Had some friends with a PR they were not going to be able to use and needed used up. So, they sent it home with us. I owe them a dinner when life slows down for them. And yes, it will be a good one! We have a great relationship and trade stuff back and forth… just ended up on the receiving end this time around!

Rubbed down with some B&B W Sauce. Then lightly coated with some of our fav rubs and into the fridge for a day. Was initially going to some this up Saturday, but things come up and postponed until yesterday.

Added the Buttery Garlic and Herb at the last minute as per the wife’s request. Can’t tell Mama no… Well, you can… but?!?! Ha!

Put a snack on the CC pellet grill, trout caught Sat morning. Rubbed with EVOO, some Old Bay with fresh squeezed lemon and some butter. Everything is better with butter! 😁

Was a tasty snack while dinner was going.

Got the charcoal, new to me but has great flavor.

Then had a weird thought… yea… welcome to my world! 🙄😂

Anyway, had some asparagus and two more trout thawed… So a thought hit me about bacon.

End result is the Performer is a keeper! Thanks for sticking with me… final pics. I will say the PR and trout was amazing! The asparagus however, needed pulled earlier… messed that up bad! Lesson learned!

Great cook Justin, well all but the asparagus😄. We eat a lot of fish, but never thought about bacon wrapped. That's thinking outside the box. That prime rib looks perfectly cooked to me, nice work...

Thanks my friend, yea my thoughts sometimes get the best of me. Sometimes my weird ideas work and some don’t. As said, the PR and fish were tasty. The asparagus however, I think would be good if pulled much earlier.

Thanks Rich, the top grate as said above was just not saveable. I try to keep everything genuine… but sometimes just can’t!

So far, really liking this new CI grate and the Performer is a keeper as said. Looking forward to more cooks soon.
 
Also, for full disclosure and credit… my CC pellet grill shut down mid smoke on the trout and asparagus. Was going to toss the fish. I have to thank my friend Eric @SmokinEdge for his help on chatting with me and the help. I was about ready to trash it. Was very upset and he logically chatted with me and the fish ended up very tasty.

Hell yeah! Looks good to me! That Beef is cooked perfectly for my taste buds! Trout sounds good too! How'd the bacon wrap on the trout turn out? Oh- Congrats for the spinner ride!
 
Hey Buddy that is a tasty looking spread for sure, Justin! Agree with the idea that bacon makes pretty much anything better! And that PR is definitely the star attraction - I’d say you knocked it out of the park my friend! Nicely done Brother!

I appreciate that Justin, but you had this, I was just glad to be encouragement.
 
Some awesome surf and turf! Love the asparagus too. I've been eating a ton of it lately.
 
Brother that meat looks delicious, I did however put the flag at half-staff for the asparagus.

Did the prime rib justice! Bet that trout was good. I miss HEB having whole frozen trout they use to sell in a bag.

Thanks Keith, PR was pretty tasty… trout was great as well. Crispy bacon and nice juicy rainbow meat inside with the lemon, butter and Old Bay. All flavors worked well together! Have to pulled the asparagus sooner next time… just got away from me.
