I just bought a electric masterbuilt 40 inch smoker. I've been wanting to get into smoking, but have been hesitant since meat isn't exactly cheap and I have six mouths to feed and I don't want to mess up.

Welcome to SMF, there is a wealth of knowledge here, There is no substitute to doing, My advice would to pick a meat and go that sub forum and read the stickies. If it were me, Id go pork, its forgiving and oh so yummy.  Here is a link for ribs from Al, and he gives a step by step process and I can tell you first hand they are delish, if they are not the best ribs you've ever had , they are in the top 3!!

When you got your family asking whats next, perhaps a platter of pulled pork

there is a host of side dishes to go with everything, just look at Side items

Feel free to ask questions and remember to take pics of the process, We call it Q View.

Nothing builds confidence like success, jump in the food is great.
