Hey everyone
I'm from Philly new to the whole curing and smoking thing. Love to grill have a barrel charcoal smoker that I mess around with. Need to step up soon and get one with better temp control. I'm initial question for someone is once I have a equilibrium cured (digging dog formula ty) piece or pieces of meat how long will they last out of the brine in the refrigerator be fore needing cooked?

I usually let my bacon rest in the fridge for 4 days after curing, but some of the guys go for a week.
