New and interesting Smoking ideas wanted

I've been smoking for years, but have only gotten serious about it recently. I have smoked the main things people go for; brisket, pulled pork, ribs, sausage. I have also ventured out and smoked meatloaf, and fish. I'm looking for new and interesting ideas of things to smoke. I have on my list to try to smoke steaks and pork chops. I'm sure some of you out there have experimented with different things with some of the results being better than what you thought. Any wood recommendations? I currently use Hickory, Apple, Cherry, Mesquite, and Pecan.

Leg of lamb comes out really nice on the smoker. We've done duck before. A couple of times a year I'll make a batch of beef jerky, and in the summer I'll smoke a bunch of veggies and use them to make a most excellent salsa.

Welcome aboard. The sky is basically the limit, as I'm sure you'll soon find out. What I'm trying to so is that if can be cooked, it can be smoked.

Here's a few idea's you may not be aware of.




If I'm on the right track let us know. There are plenty of other idea's/meals on this site.

Welcome aboard. The sky is basically the limit, as I'm sure you'll soon find out. What I'm trying to so is that if can be cooked, it can be smoked.

Steaks and pork chops are both excellent to smoke. The last time I did pork chops I was able to use peach wood and they came out great!

I spoke the thick pork chops and then do a reverse sear. That's a frequent request at my house. Also smoked hamburgers, smoked cream cheese, pork belly, bacon wrapped dill pickles, pork steaks to give you a few more ideas. I use mostly cherry and pecan.

Find your local streaming PBS station. Look for any series Steven Raichlen has done, whether that's Project Smoke, Project Fire, or Planet Barbecue. You will get plenty of inspiration for something off the main stream.

Fatties will give you an unlimited amount of options. I've done them out of ground beef, sausage and chicken. Phliiy cheese steak, sausage with pizza fillings, chicken Parm and on it goes , all bacon wrapped of course. . Smoking eye of round for lunch meat is amazing. Smoke a homemade gyro loaf or chicken shawarma on a Trompo King. In your smoker. Just some random ones that popped out of my brain lol. I have threads on all of these.

I actually talked my wife into letting me smoke burgers tonight instead of the grill. Used hickory and they turned out amazing
 
How about lamb shoulder (totally different than leg of lamb, but for some reason its harder to come by), Lamb breast, (each pack is a belly rack and another strip of side meat), beef cheeks (low and slow, it's amazing) cold smoked butter (for scrambled eggs, popcorn, corn on the cob, etc.

Don't forget to do a fatty (many types!) or a shot-glass burger


 
Leg of lamb can also be smoked to fall apart tender. Another one folks won't expect, but super good.
In the theme of lamb, lamb neck smoked till is wrapped then cooked till tender is my favorite. So moist and tender.
 
So I'm not much of a chicken wing guy but one New Years I had a request for buffalo wings. The non-breaded fried ones. I had smoked something that day, and that evening the smoker was still trickling out decent smoke, but only from one smoldering chunk - so very little heat in the pit on a cold evening. I tossed the wings onto the grates for maybe 45 minutes or an hour before I deep fried them. I must say, they were really good and you could still taste the smoke. I'd figured it would all 'fry off'.

That would, I suppose, have been my first official "cold smoke"
