My first sausage

This is my first try at sausage so I did a simple breakfast sausage.

started with 20# of 1in cubed boston butt

added spices and let set overnite in the fridge

then ground and stuffed

smoked for 7hrs until internal of 152º. I smoked it in my 250 RF with the cooking racks removed!

  I purchased the seasonings from my local meat market, This being my first try I thought I would go the safe route.I do know it has CRP, garlic and sage.
 It came out very good. I can't wait to try some of the recipes you guys have posted!

Congrats on your first run of sausage. It looks awesome and I know it tasted very good too.

Was it a pre-mix?

It obviously had cure in it----Sure looks great.

 Thanks bear, Yes it came in sealed package with no ingredients or instructions on it. My butcher told me it's what he uses to make the sausage he sales in the market.

The only thing it did say on the package was it would season 25# of meat.

Hmmmm, that's strange.

It had to be cured (nice Ham color), but most pre-mixes with cure come in two packs---I big pack of seasoning, and a little bitty pack of cure (1 ounce for 25 pounds).

It's about as good looking a sausage as I've ever seen.

Man, that came out looking amazing!!  Gives me hope for when I get around to my first try at sausage!
Thank you Barbe, I tried to read up on what you guys have posted on making sausage and it definetly worked. thanks everyone for the great (how to) info.

looks good what size of casing did you use
Thanks for the kind words coyote1. Being new to the art i'm unfamiliar with the different size casings. I got them from my butcher and all I know is they are all natural casings and they came packed in salt.
