Used pecan chunks. Made a light/mild memphis style rub and mopped it down with an apple vinegar and beer mop. finished the last hour off with some baby rays sauce. 6 hours, 230 degrees. Made 4 racks. Guests were pleasantly pleased and plumped.

Just curious..........................what flavor of Sweet Baby Rays did you use?
 
man them look good. I cant get good beef ribs round here, they are all bone hardly any meat.
