Good morning all and Happy Father's Day!

Just took this pic about 5 minutes ago. It's been smoking (Traeger Pro Series 34) since 10:45 pm EST last night (about 8 hours) at 225 degrees. It has about 4 more hours before I start checking temps.

  1. Dry rub - SPG
  2. Hickory pellets

The fat I cut off the brisket.

This is the at the 12 hour mark. Just wrapped it, srizzled some of its tallow and bumped up the temp to 250. Gonna check back in 2 hours

Happy Father's Day to all of the dads out there.

The brisket came out absolutely amazing!

I took it off the smoker at around 2 pm and let it rest until 6:30 pm. I want to thank everyone for their advice and help. This is the reason I joined this forum.
