200Well since you don't have any proper toolsfor the reverse sear, I'd recommend doing the only logical thing. Foil it and finish it in the oven. Might even recommend a finished IT of 200* or so...

The problem is I have to many toys that would do the job. Now i'm thinking BGE for 1 side of the sear. then cast iron for the other. Let it rest in the UDS that is not lit. While it is sitting next to the gas grillHe's saying since you're not prepared you might as well pull it! Haha

NO!On a serious note I'd just set your drum basket on a couple of Cinder blocks put a grate over it and sear with some lump right out in the open..kind of like a open camp fire.

Plug the crockpot in, turn to low, fill 1/2 full of straight ketchup, put the tritip in the crockpot, place crockpot in the oven set to "Broil". Cook until ketchup bubbles out on to kitchen floor, put out fire in oven and reset breaker that tripped when crockpot cord melted.
