Happy 4th to all! I am grateful and thankful for our freedom, and the ability to share my Independence Day meal.
First, I had 3 racks of St Louis cut spare ribs at about 3lbs a rack. I removed the membrane on the back.
Second, a nice rub. I used a Disney rub recipe and left out the salt. Apple wood chunk for the light smoke flavor.
I then added the ribs to the smoke. It held 275 to 285 for 4.5 hrs. No foil.
I pulled the ribs at 182 degrees IT for a quick sauce and char on the Weber grill. Not as good as charcoal but still a good flavor.
Bonus:
Wife made a jello cake (or poke cake to some). Essentially a cake with liquid jello in straw sized holes with cool whip and fruit on top.
