More vortex wings

Made some wings on the vortex again on my 22” kettle. The 22” has become mostly my go to for the vortex because of the heat it makes I don’t want to use it on my 26” kettle. But I rubbed them with some SPOG along with some cornstarch which might not be needed with the vortex. I used some pecan chips above the vortex and they turned out great. I’m working on a sweet bbq sauce that is mostly heavy with brown sugar, some ketchup, butter, agave and some garlic pepper. Anywhere here are the pics. The bbq sauce I’m trying to duplicate a recipe from a restaurant in Northwest Ohio called Jed’s that is my favorite sauce. This was my first attempt while it was good. It’s not there yet.

Me too Ray, I can get thighs and drums at Aldi for a $1.99lb for the family pack.
I'm getting legs and thighs at Sam's for 98¢ a pound Clif, Freezermart is packed. I like doing thighs a bit slower than the Vortex provides, indirect with the SnS. Enough, don't want to jack this thread. RAY

The vortex does wonders!

It’s almost too easy with it also



Good color on those wings, nice work! I started doing legs instead of wings with the Vortex, five minutes longer, twice the meat, one third the price. RAY
Thanks, We have been too. Lots of thighs as well this was my second to last batch of wings in the freezer.

I'm getting legs and thighs at Sam's for 98¢ a pound Clif, Freezermart is packed. I like doing thighs a bit slower than the Vortex provides, indirect with the SnS. Enough, don't want to jack this thread. RAY

Man .98 is a steal. I haven’t even tried my SnS that came with my 26. I’ll have to eventually. But we do love the thighs

I also have a 22 and 26, SnS and a Vortex. I save the 26 just for smoking, ribs and butts. I like using the chain method with the 26'er, hickory chunks. I've found I get a great smoke that way and can go around 10-12 hours without have to add more coals. RAY
 
Great looking wings!! I have been looking at the Vortex for quite a while. Do you have the small or medium that you use in your 22.5" kettle?

Ray that’s pretty much what I do. I sold my 22”WSM to get the 26” kettle. I found myself using my 22” kettle to smoke on more than the WSM bs it was so much easier. That’s when I decided I’d just sell the WSM and get the 26” to smoke on for space. Still love the decision. The snake method with the 26” almost is too easy I love it.

Jason I have the medium which is compatible with the 22” and 26”

Jason honestly it’s the best thing I’ve bought for the kettle. It gets the kettle so hot you can cook everything pretty much indirect if you want to call it that and not worry about flare ups. It makes it so easy to get crunchy skin.. you’ll love it. I use it even to set up charcoal for beer can chicken, chicken wings, and pizza on the kettle. It’s great and just keep it stored i the then bottom grate by the wheels
