Korean Wings

I was able to get some Gojuchan sauce in the local supermarket. It is a Korean garlic/pepper sauce and is very tasty and hard to get here in the Canadian Rockies. I used it for heat in a wings sauce.

I mixed:

  • 25 ml (2 tbsp) soy sauce
  • 10 ml (2 tsp) Gojuchan sauce
  • 15 ml (1 tbsp) hoisin
  • 22 ml (1 1/2 tbsp) honey
  • 1 ml (1/4 tsp) rice vinegar
  • 5 ml (1 tsp) sherry
  • 2 ml (1/2 tsp) sesame oil
  • 5 ml (1 tsp) minced ginger
  • 1 small clove of garlic, crushed or minced
  • 25 ml (2 tbsp) water
  • 25 ml (2 tbsp) ketchup
I brought it to a boil and added 7 ml (1 1/2 tsp) cornstarch dissolved in 10 ml (2 tsp) cold water. Cook until thickened and remove from heat.

I took about 750 grams (2 pounds) of wings and tossed them with 15 ml (1 tbsp) baking powder. I let them sit on a rack for 1/2 hour and then put them in my Traeger Timberline at 200 C (400 F). I sprayed them with a bit of oil.

I let them cook for 20 minutes, flipped them and sprayed with oil. After 20 minutes more, they were nice and crispy. I warmed the sauce and tossed the wings in it.

These were very tasty. The Gojuchan gave some heat. I would use more but the Woman of My Dreams is not heat tolerant. The soy sauce and hoisin gave a salty background, and the sesame oil added an earthy flavour. The baking powder gave the wings a crunchy skin.

The Verdict:

These taste great. I do think I will sprinkle them with sesame seeds next time.

They look excellent! I'll have to say though... you haven't lost your touch for giving me some food cravings!

Great looking wings. Nice and crispy.

I've stayed away from Gojuchan because of the heat. Maybe we'll need to work our way into it.

Oh Hells' yeah Disco. I have gochujang in the fridge all the time. Bookmarked and will be doing wings or drums with this soon!
