Im guessing most people here are American. Since i read and watch tonnes of smoking and grilling i found it really interesting that we call cuts of meat something totally different.

For example.
Boston Butt (which isnt from the butt :P): We call a Scotch Fillet
Porterhouse: we call a TBone
Strip/ny: we call a porterhouse.
Ribeye: we call this a scotch fillet. its only called Ribeye if the bone is left in.

oh and if the Ribeye on the bone has the entire bone ots called a tomahawk :)

Anyhow i thought it was interesting.

I just read a thread, the other evening, where a member was talking about a code of letters and numbers known to educated butchers / meat cutters, for different cuts of meat to avoid similar confusion over different cut names just here in the states.

Now I am wondering if the code is world wide or just the US.

I'll try to find that thread and post it here.
 
You know what's funny Rusty is in the US those terms are interchangable but alot of times a store will use a rarer term, for the same cut they had last week but then it costs 2 dollars more..

More then once I've had to take my phone out and google names in stores, then go ask the meat department. Curious to find out what a pork butt would be down in Aussie, or a Brisket for instance. To say nothing perhaps of what we use for bacon!
 
Well pork butt is a Pork Scotch Fillet., Brisket is still brisket., Our bacon different. USA bacon is called Streaky bacon or Belly bacon. our bacon is called Eye Bacon or just bacon.

Also our bacon is cut thinker than USA bacon. it doesn't crisp up nearly as good..
 
What's funny Rusty is the UK Style bacon is treated by many people in the USA as rare or exotic. I prefer it as it's far less fat, far more meat. Not sure if Aussie bacon is Back Bacon or not. Guess I might need to start ye ole googling!
