The machine you got sounds like it is very light-duty. I would return it if you can and find something else either manual or a more expensive electric model with a longer duty cycle.

Did I miss him saying he was doing a "re-grind" as opposed to just doing X pounds on a first grind? Mine doesn't slow down doing a brisket packer.I can believe that grinder could do 5 lbs per minute on the first grind through the coarse plate. The second grind through the fine plate will take 2 to 3 times as long as the first grind.
The slower grind rate on the second grind through the fine plate pretty much applies to most grinders though.

So in 4 minutes (limit said to be 5), that's 20 pounds.
That's a helluva lot of meat. It also has to be kept very cold awaiting grinding. AND after.
You have the space for that as well?
I don't think you fully understand or know what your needs are and are looking at only the issues that MIGHT arise.

Quality gear keeps its value. Runs very quiet considering it's a grinder. Pretty low RPMs
