So it’s been a good while since I’ve smoked anything on the OKJ. I decided to do up some stuffed chicken thighs. They are stuffed with cream cheese and jalapeños. Wrapped in bacon and dusted with some Weber honey garlic rub. I’m waiting for them to finish now. It’s kind of windy out that’s been a little challenging to my heat. Currently at 148 and heading for that sweet spot at 165. I’ll catch a pic once they come off the smoker.

Thanks, I’m not sure why I don’t make these more often. They are super delicious. I think that Jeff’s rub is a bit better but the honey garlic was super tasty. Went great with the mac n cheese plus the guacamole is always a great addition to barbecue.

Thanks Al, it’s always rewarding to have a cook come out right. Of course I did try a different method of starting my coals as an experiment. That caused things to take much longer but now I know that method is not viable if I am in a hurry lol.
