Alright friends it’s been a long day but we officially crossed the finish line and things went well my pork but finished up by 10 am so I stuffed In a cooler around towels and she kept hot till supper love that ol trick and my pork belly burnt ends came out very well I started them out at about 250-275 and rolled them in a sweet with a smidge of heat rub let them sit for about 30-45 mins and put them on the smoker for 3 hours naked after 3 hours they weee running about 180 according to my thermal pen one and I got a commercial sauce I like (kinders gold) and I accidentally put it on a little heavy then I anticipated so the sauce didn’t set up as well as I would have liked but it still came out great color tenderness was awesome I think they finished up for prolly another 45 mins roughly and it was true to its name meat candy thanks for sitting along with me on this cook hope yall got a little hungry reading this see yall on the next one
