I've done kalbi (Asian beef ribs) before on the grill, but today I decided to smoke them instead.

My heavens! Talk about improving on perfection!

Marinade:
1/2 cup tamari (dark soy sauce)
1/2 ripe pear, pureed
2 tablespoons finely minced garlic
1 tablespoon grated fresh ginger
3 tablespoons honey
2 tablespoons toasted sesame seeds
2 tablespoons sesame oil
1 tablespoon red pepper flakes
1/4 teaspoon ground black pepper
2 scallions sliced thin

Butterfly and marinate ribs for 24 hours, then smoke for 4 to 6 hours until tender (I used apple wood because it seemed like it would go with this recipe).
