Fired up the electric smoker today. I’ve got it pretty packed. Two racks of saint lewis style pork ribs, a corned beef, one rack of beef ribs, and a brisket point for some burnt ends.
 
Beef ribs just came off.

sorry about the glare in the photo. Brisket and corned beef just hit the stall I’m about to wrap them. Pork ribs should be pulled soon. Come on over whenever your hungry!
 
Started a little before eight. Went a little over what I wanted on the ribs but they are still good.

The brisket is chopped and sauced. Ginger beer, sugar, and some pretty good barbecue sauce out of Cleveland. Back to the smoker.

All looking tasty. Love to hear more about your ginger beer burnt ends. What cut of beef ribs are those?
 
So I was exhausted and crashed before I could post again. The beef ribs were back ribs. Only my secon time doing them. The burnt ends are great. I’ve done a few briskets before but this was my first time breaking down a packer and doing the burnt ends. I was reading someone who used cola, sugar, and bbq sauce for theirs. I had some ginger beer with lime and it seamed a good substitute. I stand by the choice. The ginger heat was a nice addition. The food turned out well. Just made for a long day. I’m turning the smoked corned beef into hash this morning. I’ll post pictures of it and if I remember some of the burnt ends when I reheat them.

I cheated and did the potatoes in the air fryer. Threw them in with the corned beef and a little duck fat just for good measure. spog and done. Nice, easy, and delicious. You can still see a little of the steam in the last shot.
