Just landed

  1. 30 year Air Force vet here. I'm a novice smoker and I use a masterbuilt electric. Love smoking anything, mostly for friends and family to enjoy. Living here in West Point MS I have access to all kinds of different regional foods. I'm wanting to try gator tail in the smoker. Anyone have any input? Haven't seen a lot on the web that intrigues me on it so far.

    Welcome to SMF Gunrblades, and thank you for your service!  Glad you are here and having so much fun with your MES.  I've never smoked gator before.  Just the other night on a rerun of the second season of BBQ Pitmasters, alligator was something they had to serve.  Folks served it a bunch of different ways.  One of the contestants used a Jaccard meat tenderizer on theirs, a handy little gadget because evidently it can get real tough and rubbery. 

    You can use the search feature to find several alligator threads.  SMF's resident unusual meat smoker Leah smoked some alligator a couple years ago.  Here's a link to that thread.

    Welcome to the boards and of course, Thank you for your service.

    Alligator is like smoking no two people agree on it. Or that's the way I have always seen it. Personally I would just as soon have fish or meat than amphibian, even frog. Its ok its a novel cook, but if it tastes like chicken why not eat chicken, ya know what I mean?

    Turtle and alligator are without peer in a pot of Sauce Piquante. You cook all day long, its a cold weather coonazz food and it is spicy but its also a tad warm. Like take the top layer of skin off your tongue, if ya know what I mean. BUT its totally awesome food!

    I never tried smoking it, although I have friends who swear by what the call alligator chips. Its flaked meat that is spiced, rubbed, and smoked like jerky.

    Personally though, I have not had any.

    My pallet says alligator is sauce piquante.
