Need advice. I smoked a pork butt for 24 hours until it was showing 200 degrees. I put it in my oven on “keep warm” setting overnight. It’s now 12 hours later and the temperature is down to 110 degrees when I just probed it. Is the butt still good?
 
What temp did you smoke at that it took 24 hours to reach 200? This more scary food wise than the 12 hour rest imo. Are you sure the accuracy of your temperature probe? What is the temperature of the keep warm setting I would think it would be around 140*f

I learned something new about fancy ovens, mine runs till the cut the power off or the house burned down. I didn’t know you cooked your butts that long thanks for educating us both

As Al ( SmokinAl SmokinAl ) stated if have the fortune of whole intact meat, you're good providing it went into the fridge after probing and possibly pulling or heated above 140°. Pulling spreads the meat and it cools much faster to get below 40° for storage.

Should be fine. Despite the odd “ investigative” report on a “news” network, our ( assuming you are on the US of A) meat source(s) and processing methods are quite good.

If you are located in Burkina Faso, please reconsider eating it or even feeding it to another animal.
