Seasoned up some 80/20 heavily with the new blend and rolled into 3 oz balls. Lubed up the Flat-Iron with some butter, tossed the tortillas on, topped with a taco meat ball, and smashed. Flipped, gave another press, and flipped again to top with cheese.
Garnished with some pico de gallo, crema, and a squeese of lime. Served with cilantro lime rice and refried beans.
.....and I forgot to grab a 6'er of Modelo while I was out, so washed down with a Dr. Pepper.
I was also able to stash one away to heat up for a snack later before the family got their grubby hands on them. Glad I did, because there's nothing left.
