i used to bbq chubs. you poke holes into the chub with a big meat fork. then score it in diamond pattern about 1/2" deep. put it in a roster pan and smother with your sauce and seasonings. roast it at 200 with lid on. roll it in the sauce every 30 min. roast it for several hours doing that.
 
I like this idea and will give this a try soon myself. I usually slice my chubs about 3/8 thick and coat with bbq sauce for grilling until they start getting bubbly crispy flipping sides, but this would be a new twist on the griddle. Thanks for sharing.

I love a smoked bologna chub but that's a different animal. I'd dig in though!
