Hi everyone, brand new to the forum.......i have a question, i have a master built electric smoker and I'm going to smoke a turkey this Saturday was wondering about adding wood chips to the smoker ... should i add through out the cooking process or the first 2 hrs "like i do my Boston butts".............i don't want smoke overpowering the turkey..So i think adding wood throughout will do that.......your thoughts.

                                                                                      thanks  Tony

Personally I let the smoke roll the whole time, but that's just me.

Welcome to the site!  I find that poultry absorbs smoke, so I use less wood.  But that's just me.

I've come to the personal decision that an hour or so is just right my family's and I's tastes for smoked fowl in general.
More than that is just too much.

Of course if you're burning wood, then your smoking the whole time.
That is where you definitely want the Blue smoke.
