Hello All,

First post from a  new member from Katy, Texas. (just west of Houston)

I grew up processing game and livestock, but until now have been taking it to commercial processors. My brothers have been processing their own for years, and I have helped them occasionally. My son wanted to start doing it ourselves, so here we go. I am digging in to my past memories of how we used to do it, and actually bringing back some fond memories of my childhood.

Anyway, the attached photos show the 3'x3'x6' smokehouse we are building generated from ideas seen on this forum. A small propane grill mounted in the bottom of the unit is the heat source. We had the test run last night and need some small tweaks before we make our first batch of sausage this weekend.

This forum has been very beneficial with information at the onset of this endeavor.
