Hello, I am from Rankin County in Mississippi and I have just started processing my own meats (mostly deer and pork/wild hog). I recently purchased a 3/4hp Cabalas Carnivore grinder and bought the dual grind kit from Meat that fits my grinder. After building a smoke house I have been working to master smoked sausage which is led me here looking for information including recipes. Looking forward to learning from all of you who have been at this for years.
