Hi there

I have been smoking meat for about 2 years. I have both WSM and Traeger and do most of my smoking on traeger. Recently i have been researching more and more sausage making art and just purchased MES 40 1st generation . Will try both cure sausages and dry sausages. Would love to meet somebody from the area to share experiences

cheers]

welcome! Lots of good information here, if you are going to get into curing, make sure to try making your own bacon. Finding the belly at a reasonable price cancer difficult in Canada, like it is with any meat ($10/lb for brisket the other day, yeah I almost died seeing that price, needless to say I didn't buy). You can always make bacon from a butt or a jowl. It will all be better than the store bought stuff.

thanks for the warm welcome. Wold love to meet some more meat smoking guys from Ottawa. leGrand it's great meeting you.

Good morning and welcome to the forum, from a nice chilly day in East Texas, and the best site on the web. Lots of great people with tons of information on just about  everything.
