Hello from Nebraska!

  1. I wanted to say hello to all the members!  I thankfully stumbled across this forum when I was researching... meat probes.  I am loving the site and the wealth of knowledge contained here!  I reside in Omaha Nebraska (GO HUSKERS!).  I have been smoking for about 3 years.  I started out with a used Brinkman and have tried both electric and charcoal in that one.  I have retired the Brinkman as of last Thursday when I finally upgraded to a Masterbuilt Electric or as I've seen them called MBE.  I'd say my experience level is intermediate.  After seasoning the MBE Thursday I got to break it in Saturday for my buddies birthday.  Unfortunately I forgot to take pictures of the 20 racks of baby backs we smoked.  The 2-2-1 did a GREAT job and the meat was fall off the bone.  Still excited with the new smoker I smoked 2 fatties last night. Did a chicken cordon bleu and a chicken fattie with crab, green onion, stuffing, parm and mozzarella cheese.  Both recipes from the site.  Both turned out very well and I will post pics tonight when I get home.

    Just wanted to say hello, and a BIG thank you to everyone that adds to all the knowledge to be found here!  I'll be sure and help out where I can!  Happy smoking!

     The wealth of knowledge here is amazing.

     The MES is a great way to smoke . Had one for a few years and figure on having to get another sometime next year.

    Glad to have you with us James. As you have already found out, this site has a wealth of knowledge and great people that will help you when you have questions. A lot of have had our share of experiences of what went wrong and what went right and have shared them here within these forum pages. Hopefully, we have reduced the learning curve for you and you'll have more successes with your smokes than failures.
