New to the Forum and Smoking / Pellet Grilling. Just bought a CampChef Woodwind SR. So far have done some wings (needs improvement), And reverse seared a pair of Ribeyes (THEY WERE AWESOME!) Liking the Grill gives me multiple options for cooking, allows me to Sear a steak without smoking out the house and smoke detectors!

Lots to learn, will be stalking many threads here...

Welcome to the club! What went wrong with the wings? I'm just curious.
We brined them for 4 hours (never done that before, used to just Frying wings) and then smoked them on High Smoke. We found them to be VERY Salty, and a tad rubbery. So trying again tonight, no brine, and will hit them on the Sear burner at end. Fingers Crossed.
 
Welcome! I dont think the high smoke setting is high enough to cook the wings. The first we times I did them on my Woodwind they came out rubbery as well. I cook them at 300 now and throw in the smoke tube, AMNTS.

Made some last night without the brine. High smoke to 165 then on the sear... MUCH BETTER. Beer Can Chicken tonight.
