South Louisiana-Yes, it is HOT
Been a while since I've had this dish. We were given some fresh swordfish recently, about a 3# loin. Cut 4 steaks for the grill.

First- char roasted the olive oil coated ripe red bell peppers on my boil jet burner....

Tied in a walmart bag, in the microwave for two minutes to create steam, left to rest for about 25 minutes. Made the sauce at my cousin's house.

The recipe for the Mediterranean Swordfish steaks...

Man...this was so good. Swordfish is dense and firm. Even more so than yellowfin tuna. Those flavors in the marinade just really go well with the fish. The pasta really compliments the fish!

Looks fantastic Keith.

Point for sure

Looks tasty! I've used some of her recipes to good success...well part of some actually, I tend to mishmash several recipes.

What did the roasted red pepper go in to? I dont see it in the recipe?
