13lb whole ribeye. Advice on slicing?

Ok I got 12 -1¼" thick steaks. 1lb of stew/noodle meat. & 1 good size prime rib roast. & 6- ½" slices for ribeye sandwiches.

Also got 1lb of beef fat idk what to do with.

Wish I could have afforded 2 of the whole ribeyes.
Could turn the fat into tallow, or freeze and use for sausage. Nice thing about getting the whole thing... you can do with it what you want. Those ribeye sandwiches are gonna be great!

What is cold turn the fat? Is it something like churning/turning butter.

Last one I bought was $5.99 lb and weighed 11.9 lbs. turned into 11 steaks. When it’s cooked what we don’t eat off of a steak the dogs consume handily.

Yeah buying this was a late late Christmas gift, lmao or a really really early Christmas gift to myself.

Lol I did not think I would be this wore out from processing some steaks & such.

Well that & they had bacon for $19 for 10#'s

Last one I got I dry aged for 10 days in one of those bags and then cut it all into 2" thick steaks. Yes, I love a good rib eye steak. Wish I could find them on sale here but the pickings are a bit slim around here. Might go to one of the cattle ranches when they start butchering and ask what the can do for me. Most, if not all, only sell 1/2 or whole cows unbutchered.

I saw a video last week were a guy was using zip lock bags and a straw to suck the air out of the ziplock bag prior to freezing. I know there are several ways to accomplish removing the air from a freezer bag but I thought this was a very easy and cheap way to utilize a freezer bag in lieu of a food saver type apparatus.
Good looking find. Wish I could run across something like you purchased at that price.

I have done the large plastic straw suck with ziplock bags for years with everything I freeze, which is most of what I eat. I do have an older vacuum sealer, but it is a hassle to get it out, find a place for it, mess with packaging, sealing, then clean up later. I just zip the straw over to one side, suck the air out, pull with my teeth while I close the last of the zip, put it in the freezer. Way easier for me.
