I was in the mood for something sweet, an indulgence that I can rarely get these days. thanks to my Pancreas trying to kill me last year...

So I thought of the times we used to bake an apple when I was younger... and I got this idea. I started off by quartering an apple to make it easier to remove the core. I then made a mixture of butter, brown sugar, cinnamon, and a bit of nutmeg. that I liberally coated the cut faces of the apple in. I then placed these into some aluminum foil face down and loosely wrapped. these went onto the grill for about 45 minutes over indirect heat.

When they came off the grill I poured the left over butter mix over the top, along with some that I had reserved for later.

These then got a drizzle of some salted caramel topping, followed by whipped cream and chopped pecans.

Looks great.

I'm cautious of sucrose (sugar) not because of pancreas issues, but my taste buds don't also like it much of the time.

If you have sugar issues try using Allulose as a substitute. It is the best sugar substitute I've used.
Only issue is none of the sugar replacements replace brown sugar for taste. I use a teaspoon or two of molasses for the flavor.

Grilled apples sounds exceptional, however I've always been to lazy to even think about that (only do canned pineapple rings that way). I just do similar by "frying" with butter in a skillet. Then add the sweetener, cinnamon, and whatever else seems good at the time. Been enjoying apples for 60+ years that way. BTW, Red Hots cinnamon candy makes for a good portion of the cinnamon ration(unless you're trying to avoid sugar).
I second Allulose for the sweetener. I like a Monkfruit and Allulose blend even better. It's much closer to a 1:1 volume match with sugar. Stevia and Allulose may work too but haven't tried it yet.

Looks fantastic and I am all about make sure my sweet tooth keeps getting it's fix.

So this is a go for sure,

Thanks for the post.

And I have some little tiny cast iron pans that would do the trick for this, Thanks again
