I was in the mood for something sweet, an indulgence that I can rarely get these days. thanks to my Pancreas trying to kill me last year...
So I thought of the times we used to bake an apple when I was younger... and I got this idea. I started off by quartering an apple to make it easier to remove the core. I then made a mixture of butter, brown sugar, cinnamon, and a bit of nutmeg. that I liberally coated the cut faces of the apple in. I then placed these into some aluminum foil face down and loosely wrapped. these went onto the grill for about 45 minutes over indirect heat.
When they came off the grill I poured the left over butter mix over the top, along with some that I had reserved for later.
These then got a drizzle of some salted caramel topping, followed by whipped cream and chopped pecans.
