I have been making jerky in a dehydrator for years and was inspired by Alton Brown to create a Terra-cotta smoker so I could smoke venison steak nuggets.  I found this site along with many others in my research and have completed 3 loads trying different woods, temps and times recommended through many places.  I am now hooked and going to try a beef brisket later today or tomorrow depending on what recipes I find.

I work in IT and have a wonderful supporting wife and 3 great kids, not to mention my 2 loving dogs and cats.  I hope to document, contribute and help others while I learn from the master smokers around the forums.
