Not sure how all of this works however I long time cooker of 50 years and own lots of cooking devices including Smoking trailer, Green Egg, other smokers and complete set of Dutch ovens and iron cook ware.  I specialize in cowboy cooking.  All Rubs and no sauces, my wife cooks the best red beans in the world.  We have lots of fun eating and cooking. 

I am new to this forum and in building my new propane 250 gallon, tandem trailer cooker I know I will get a lot help and advice on the best of all worlds, I am pretty handy and expect this project to be pretty nice.  I am doing it to keep busy and at 73 picked up my tank at next to nothing.  Building trailers is fun for me as well.

As far as cooking, I cook low and slow and just cooked a Brisket last night, it really made a nice breakfast.
