First, while I cooked this outside, I used a gas burner, no smoking or grilling involved so I'm placing the post here. I plan on adding a smoking step in the future.

This is a fast version of AL pastor and only took about 4 hours to complete. Significant time spent doing the prep, actual cook time was around an hour.

started a batch of scratch adobo sauce. The bulk of the prep, seems like this stuff has a thousand ingredients and they all need work lol

basically once the prep is done, boil the dried chili's, onion, garlic etc until soft, transfer the veggies to a blender, add all the other stuff including fresh pineapple, pineapple juice, some of the water from the boil and the rest of the 1000+ ingredient and blend it smooth. It'll be reasonably thick.

Cube your pork, 2 pounds place in a large skillet with lard and cook it until it's seared on all sides, turn down the heat and let it cook low with lide on stirring around often so no side burns. About 10 minutes you add 1 1/2 cups of the adobo sauce and cover for more cooking. Eventually remove the lid and cook it down until it coats the pork.

These will stand up, no way a little cheese or sauce will make them soggy.

Thanks, not much, but a little. All reserved for my lunch!

This was an Arnie TX recipe outta his book. So many things I've got to try out of it. This one will be repeated many times I think. The adobo recipe make enough for 6 lbs so we are seeing now how it freezes, making this in advance turns this meal in to a weeknight wonder!
