Had 2 birds in the deep freeze and decided to bring one back to life. Brine'd the star over night. Put it in the smoker using pecan and orange wood. Cooked at 300 for almost 6 hours. Took it out and let her rest up. We also made mashed taters, greenbean casserole, yams with pecan topping, cornbread stuff, and gravy. Had a drip tray under the bird with some chicken stock. Drippings made some really nice gravy. Only have 2 pictures. One of the bird about 3 hours in and one of my plate.

That is a great spread right there Budd.  I hope you will have room for your Thanksgiving bird.  (Unless you're gonna do ham which in that case, it doesn't matter.)

If you smoke lobster, I want to see that qview!!!  (Although I am not a lover of lobster.  Might be the butter sauce.)

But I gotta tell you, if you're gonna "bring a bird back to life", I don't think cooking it for 6 hours at 300˚ would be the suggested method.
